How much does the neck on a guitar affect the quaility of the sound?
I am looking for a new guitar neck for my maton ms500 and i’m wondering if i should go out of my way to get the same neck the guitar came with or try find a suitable cheaper neck.

The neck has a lot to do with the sound, most notably the sustain. If your neck is nothing but a bunch of glue, your tone is going down the toilet.
Advertising necks as being 3-piece, 5-piece, etc can be deceiving. If the neck is 3 pieces of wood that run the full length of the neck/headstock, that’s good. If it’s 3 separate lengths put together to make the whole thing, that’s bad.

Im going to agree with Lucas with the sustain portion of his answer. However, if you are concerned about the tonality of your sound in regards to the neck, it has relatively little effect.
There are a lot of difference between a quality (expensive) neck and a poorly built (cheaper) neck. Some expensive high end necks have custom sanding on the backs of them for a better feel and better playability. They also have better work on the frets as they file the frets on the top and bottoms of the neck smoother. More expensive necks will typically use a better wood, better grade of wood, and a better selected piece of wood. They may also have features like angled headstocks. I find that on my much better guitars, I have to turn the truss rod a lot less than compared to my cheaper ones. I can also typically get the strings (action) much lower.
You will also find some extra detail, sometimes cosmetic, sometimes both cosmetic and functional such as inlays, binding, inlay material, painted headstock, painted back of neck, string trees, nut (if included), fretboard material. Your neck only makes up part of your guitar, but your playing and comfort will be directly related to it.
